Hey Savannah, they vary quite a lot, but are usually .5-1.5 square feet in size.

What is the weight? Will it work for the top piece of a knife sheath
Hey Cory! The weight is about 5-6 ounce (3/32″ or so). You can absolutely use hair on cow scrap for a knife sheath, just make sure to like the interior with 2-3 ounce veg tan leather.
